Green Holmes is a publication about fermented food, cooking technique and the research behind the claims we encounter. We begin with a recognisable question, explain what matters and give the reader a clear answer.

Kitchen experience informs the work. Research helps us test an explanation and understand its limits. We keep the difference visible.

What we document

Food and flavour. Ingredients, labels and useful ways to bring fermented foods into familiar meals.

Kitchen technique. What a method changes, what it requires and which conditions matter. Chamber vacuum work is one part of that enquiry.

Research. What a study measured, what it found and what remains unanswered. A biological mechanism is not presented as a promise about an individual person’s health.

Who it’s for

Anyone curious about fermented food and interested in understanding it more clearly. You might cook often, be choosing your first jar or simply want a food claim explained. No specialist vocabulary or equipment is required to start reading.

Our editorial approach

We name the subject, explain unfamiliar terms and answer the opening question before asking you to read further. Personal experience is identified as experience. Research claims carry their sources and relevant limits. If we correct something, we make the correction clear.
